Every bottle tells part of the story. With only 2,100 individually numbered bottles produced, this inaugural Pinot Noir marks the beginning of Rooster & Robin.

Bright red fruits, gentle spice and savoury earthiness reflect the character of Tasmania's East Coast, where cool coastal air and long, slow ripening seasons create wines of elegance, freshness and place.

Rooster & Robin 2025 ‘11th Hour’ Pinot Noir captures everything we love about cool-climate Tasmania. Fragrant and inviting, it opens with aromas of wild strawberry, raspberry and red cherry, alongside subtle floral notes and a gentle hint of spice from time spent in oak.

The palate is bright and expressive, with layers of red berries, cranberry and ripe cherry supported by silky tannins and fresh acidity. Hints of black cherry adds depth, while notes of vanilla, clove and milk chocolate bring richness and complexity without overpowering the fruit.

There is exceptional balance throughout, with the vibrant fruit, fine structure and subtle oak working together seamlessly. The finish is long and satisfying, leaving lingering flavours of cherry and chocolate with just a hint of earthiness beginning to emerge.

Elegant, approachable and unmistakably Tasmanian, this is a Pinot Noir made to be enjoyed now, yet has the structure to evolve beautifully over the coming years.

25% hand picked, whole bunch fermented consisting of three specifically selected Pinot Noir clones, G5V12/D5V12 giving elegancy and complexity, delicacy and silky tannins as well as D2V5 for vibrancy of aromas and palate, structure and balance.

Regular Remontage (pump-over) and Pigeage (punch-down) to build texture, structure and greater flavour complexity during ferment. Wild yeast inoculation post cold soak championing the natural expression of fruit character.

Maturation and MLC in oak. 20% new / 80% seasoned French oak medium tight grain, long toast further complementing fruit expressions of dark fruit, chocolate and spices.

Bottled without fining allowing a deeper expression and purity of East Coast Pinot Noir.

The 2025 vintage on Tasmania’s East Coast was a remarkable season, delivering exceptional fruit quality alongside record yields. Slightly warmer-than-average temperatures and dry growing conditions fostered healthy vine growth, excellent fruit concentration, and strong varietal expression.

An earlier, condensed harvest allowed fruit to be picked in pristine condition, preserving freshness, balance, and natural acidity.

Pinot Noir, the region’s flagship red variety, flourished under the season’s warm and even ripening conditions. The resulting wines display vibrant red and dark berry fruit, silky tannins, and impressive depth, with the structure and balance to age gracefully.

For Rooster & Robin, the vintage holds even greater significance. By taking the plunge at the ‘11th Hour’, 2025 became our very first harvest - a memorable beginning marked by one of the East Coast’s most outstanding seasons in recent years.

With exceptional balance and structure 11th Hour will develop more complexity and integration over the next 3-5 years allowing you to enjoy now or cellar until 2030.
